Ingredients

  • Basmati rice - 100 grams
  • Split yellow moong dal - 50 grams
  • Water - 600 ml
  • Turmeric powder - 1/2 teaspoon
  • Salt - to taste
  • Ghee or oil - 2 tablespoons
  • Cumin seeds - 1 teaspoon
  • Asafoetida (hing) - a pinch
  • Ginger, grated - 1 teaspoon
  • Green chilies, chopped - 1-2 (adjust to taste)
  • Coriander leaves, chopped - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Paneer, crumbled - 50 grams

Steps

  1. Rinse the basmati rice and split yellow moong dal together under cold water until the water runs clear, then soak them for 30 minutes.
  2. In a pot, add the soaked rice and dal, along with 600 ml of water, turmeric powder, and salt. Bring to a boil, then reduce heat and simmer covered for 15-20 minutes until cooked and mushy.
  3. Once cooked, remove from heat and let it cool slightly. Stir in the chopped coriander leaves and lemon juice, mixing well.
  4. Heat ghee or oil in a non-stick pan over medium heat. Add cumin seeds and let them splutter, followed by a pinch of asafoetida, grated ginger, and chopped green chilies. Sauté for 1-2 minutes.
  5. Add the cooked rice and dal mixture to the pan, spreading it evenly. Cook for 5-7 minutes until the bottom is slightly crispy.
  6. Flip the khichdi carefully to crisp the other side, cooking for another 5-7 minutes.
  7. Once both sides are crispy, sprinkle crumbled paneer on top, cover the pan, and let it cook for an additional 2-3 minutes.
  8. Serve hot, garnished with extra coriander leaves and accompanied by yogurt or chutney.
