Ingredients
- Basmati rice - 100 grams
- Split yellow moong dal - 50 grams
- Water - 600 ml
- Turmeric powder - 1/2 teaspoon
- Salt - to taste
- Ghee or oil - 2 tablespoons
- Cumin seeds - 1 teaspoon
- Asafoetida (hing) - a pinch
- Ginger, grated - 1 teaspoon
- Green chilies, chopped - 1-2 (adjust to taste)
- Coriander leaves, chopped - 2 tablespoons
- Lemon juice - 1 tablespoon
- Paneer, crumbled - 50 grams
Steps
- Rinse the basmati rice and split yellow moong dal together under cold water until the water runs clear, then soak them for 30 minutes.
- In a pot, add the soaked rice and dal, along with 600 ml of water, turmeric powder, and salt. Bring to a boil, then reduce heat and simmer covered for 15-20 minutes until cooked and mushy.
- Once cooked, remove from heat and let it cool slightly. Stir in the chopped coriander leaves and lemon juice, mixing well.
- Heat ghee or oil in a non-stick pan over medium heat. Add cumin seeds and let them splutter, followed by a pinch of asafoetida, grated ginger, and chopped green chilies. Sauté for 1-2 minutes.
- Add the cooked rice and dal mixture to the pan, spreading it evenly. Cook for 5-7 minutes until the bottom is slightly crispy.
- Flip the khichdi carefully to crisp the other side, cooking for another 5-7 minutes.
- Once both sides are crispy, sprinkle crumbled paneer on top, cover the pan, and let it cook for an additional 2-3 minutes.
- Serve hot, garnished with extra coriander leaves and accompanied by yogurt or chutney.
