- Basmati rice - 100 grams
- Split yellow moong dal - 50 grams
- Water - 600 ml
- Ghee - 2 tablespoons
- Cumin seeds - 1 teaspoon
- Ginger, grated - 1 teaspoon
- Green chili, chopped - 1 small
- Turmeric powder - 1/2 teaspoon
- Salt - to taste
- Mixed vegetables (carrots, peas, and beans) - 100 grams
- Coriander leaves, chopped - for garnish
Steps
- Rinse the basmati rice and moong dal together under cold running water until the water runs clear, then drain and set aside.
- In a heavy-bottomed pot, heat the ghee over medium heat. Add cumin seeds and let them sizzle for a few seconds.
- Add the grated ginger and chopped green chili to the pot, sautéing for about a minute until fragrant.
- Stir in the turmeric powder and salt, followed by the rinsed rice and dal mixture, mixing well to coat them in the spices.
- Pour in the water and add the mixed vegetables. Stir to combine, then increase the heat to bring it to a boil.
- Once boiling, reduce the heat to low, cover the pot with a lid, and let it simmer for about 20 minutes, or until the rice and dal are cooked and the consistency is creamy.
- Remove from heat and let it sit covered for 5 minutes. Fluff with a fork before serving.
- Garnish with chopped coriander leaves before serving.
