Ingredients

  • Basmati rice - 100 grams
  • Split yellow moong dal - 50 grams
  • Water - 600 ml
  • Ghee - 2 tablespoons
  • Cumin seeds - 1 teaspoon
  • Ginger, grated - 1 teaspoon
  • Green chili, chopped - 1 small
  • Turmeric powder - 1/2 teaspoon
  • Salt - to taste
  • Mixed vegetables (carrots, peas, and beans) - 100 grams
  • Coriander leaves, chopped - for garnish

Steps

  1. Rinse the basmati rice and moong dal together under cold running water until the water runs clear, then drain and set aside.
  2. In a heavy-bottomed pot, heat the ghee over medium heat. Add cumin seeds and let them sizzle for a few seconds.
  3. Add the grated ginger and chopped green chili to the pot, sautéing for about a minute until fragrant.
  4. Stir in the turmeric powder and salt, followed by the rinsed rice and dal mixture, mixing well to coat them in the spices.
  5. Pour in the water and add the mixed vegetables. Stir to combine, then increase the heat to bring it to a boil.
  6. Once boiling, reduce the heat to low, cover the pot with a lid, and let it simmer for about 20 minutes, or until the rice and dal are cooked and the consistency is creamy.
  7. Remove from heat and let it sit covered for 5 minutes. Fluff with a fork before serving.
  8. Garnish with chopped coriander leaves before serving.
