Ingredients

  • Black lentils (urad dal) - 100 grams
  • Basmati rice - 150 grams
  • Water - 4 cups (1 liter for cooking lentils, 2 cups for rice)
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, pureed
  • Ginger-garlic paste - 1 tablespoon
  • Green chili - 1, slit
  • Cumin seeds - 1 teaspoon
  • Garam masala - 1 teaspoon
  • Butter - 2 tablespoons
  • Fresh cream - 2 tablespoons
  • Cilantro - for garnish
  • Salt - to taste

Steps

  1. Rinse the black lentils under cold water and soak them in water for at least 4 hours or overnight.
  2. In a pot, add the soaked lentils with 1 liter of water and salt. Cook on medium heat for about 30-40 minutes until tender. You can also use a pressure cooker for faster cooking.
  3. In a separate pot, rinse the basmati rice until the water runs clear. Soak the rice in water for 20 minutes, then drain.
  4. In a heavy-bottomed pan, heat 1 tablespoon of butter. Add cumin seeds and let them splutter.
  5. Add chopped onions and sauté until golden brown. Stir in the ginger-garlic paste and slit green chili, cooking for another minute.
  6. Add the pureed tomato and cook until the oil separates from the mixture, about 5-7 minutes.
  7. Stir in the cooked lentils along with some of their cooking liquid to achieve a creamy consistency. Add garam masala and adjust salt to taste. Cook for another 5 minutes.
  8. In a separate pot, bring 2 cups of water to a boil, add soaked rice, and a pinch of salt. Cover and cook on low heat for about 15 minutes until the rice is fluffy and water is absorbed.
  9. Once the rice is cooked, fluff it with a fork and serve with the Dal Bukhara topped with fresh cream and cilantro.
