Ingredients
- Black lentils (urad dal) - 100 grams
- Basmati rice - 150 grams
- Water - 4 cups (1 liter for cooking lentils, 2 cups for rice)
- Onion - 1 medium, finely chopped
- Tomato - 1 medium, pureed
- Ginger-garlic paste - 1 tablespoon
- Green chili - 1, slit
- Cumin seeds - 1 teaspoon
- Garam masala - 1 teaspoon
- Butter - 2 tablespoons
- Fresh cream - 2 tablespoons
- Cilantro - for garnish
- Salt - to taste
Steps
- Rinse the black lentils under cold water and soak them in water for at least 4 hours or overnight.
- In a pot, add the soaked lentils with 1 liter of water and salt. Cook on medium heat for about 30-40 minutes until tender. You can also use a pressure cooker for faster cooking.
- In a separate pot, rinse the basmati rice until the water runs clear. Soak the rice in water for 20 minutes, then drain.
- In a heavy-bottomed pan, heat 1 tablespoon of butter. Add cumin seeds and let them splutter.
- Add chopped onions and sauté until golden brown. Stir in the ginger-garlic paste and slit green chili, cooking for another minute.
- Add the pureed tomato and cook until the oil separates from the mixture, about 5-7 minutes.
- Stir in the cooked lentils along with some of their cooking liquid to achieve a creamy consistency. Add garam masala and adjust salt to taste. Cook for another 5 minutes.
- In a separate pot, bring 2 cups of water to a boil, add soaked rice, and a pinch of salt. Cover and cook on low heat for about 15 minutes until the rice is fluffy and water is absorbed.
- Once the rice is cooked, fluff it with a fork and serve with the Dal Bukhara topped with fresh cream and cilantro.
