Ingredients

  • Urad dal (black gram) - 100 grams
  • Water - 400 ml (for soaking and grinding)
  • Salt - 1/2 teaspoon
  • Cooking oil - for frying
  • Yogurt - 200 grams
  • Roasted cumin powder - 1/2 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Chaat masala - 1/2 teaspoon
  • Tamarind chutney - 2 tablespoons
  • Mint chutney - 2 tablespoons
  • Fresh coriander leaves - for garnish

Steps

  1. Rinse the urad dal under running water and soak it in 200 ml of water for at least 4 hours or overnight.
  2. Drain the soaked dal and blend it with a small amount of water (about 100 ml) to a smooth, fluffy batter. Ensure the batter is thick and aerated.
  3. Transfer the batter to a bowl, add salt, and mix well. Let it rest for 15 minutes.
  4. Heat oil in a deep frying pan over medium heat. Once hot, wet your hands and take a small portion of the batter, forming it into a small ball or disc.
  5. Carefully drop the vada into the hot oil and fry until they turn golden brown and crispy, about 4-5 minutes. Fry in batches to avoid overcrowding.
  6. Remove the fried vadas and drain them on paper towels. Soak the vadas in a bowl of warm water for 10 minutes to soften.
  7. In a separate bowl, whisk the yogurt until smooth. Add salt to taste.
  8. To serve, place the soaked vadas on a plate, pour the yogurt over them, and drizzle with tamarind and mint chutneys.
  9. Sprinkle roasted cumin powder, red chili powder, and chaat masala on top. Garnish with fresh coriander leaves.
