Ingredients

  • Semolina puris - 10 pieces
  • Cucumber - 1 medium, diced
  • Tomato - 1 medium, diced
  • Onion - 1 small, finely chopped
  • Carrot - 1 medium, grated
  • Coriander leaves - 2 tablespoons, chopped
  • Green chilies - 1 teaspoon, finely chopped
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black salt - to taste
  • Roasted cumin powder - 1 teaspoon
  • Chaat masala - 1 teaspoon
  • Vegan yogurt - 1/2 cup
  • Mint leaves - 1 tablespoon, chopped

Steps

  1. Begin by preparing the puris. If using store-bought puris, skip this step. If making from scratch, mix semolina with water to form a dough, roll out thin circles, and deep fry until golden brown.
  2. In a mixing bowl, combine diced cucumber, tomato, finely chopped onion, grated carrot, chopped coriander leaves, and green chilies.
  3. Add lemon juice, regular salt, black salt, roasted cumin powder, and chaat masala to the vegetable mixture. Toss well to combine all ingredients.
  4. In a separate bowl, whisk the vegan yogurt until smooth. Add a pinch of salt and a sprinkle of roasted cumin powder for flavor.
  5. To serve, arrange the puris on a plate. Spoon the vegetable mixture generously into each puri.
  6. Drizzle the vegan yogurt over the stuffed puris, and garnish with chopped mint leaves.
  7. Serve immediately and enjoy your Dahi Puri Salad!
