  • Puris - 12 pieces
  • Boiled potatoes - 200 grams, mashed
  • Chickpeas - 100 grams, boiled
  • Red onion - 50 grams, finely chopped
  • Cucumber - 50 grams, finely chopped
  • Fresh coriander - 2 tablespoons, chopped
  • Vegan yogurt - 150 grams
  • Tamarind chutney - 2 tablespoons
  • Green chutney - 2 tablespoons
  • Chaat masala - 1 teaspoon
  • Roasted cumin powder - 1/2 teaspoon
  • Salt - to taste
  • Black salt - to taste

Steps

  1. In a mixing bowl, combine the mashed boiled potatoes, boiled chickpeas, chopped red onion, cucumber, coriander, chaat masala, regular salt, and black salt. Mix well to create the filling.
  2. Prepare the vegan yogurt by whisking it until smooth. Add a pinch of salt and a dash of roasted cumin powder for flavor.
  3. On a serving plate, arrange the puris. Carefully break the top of each puri to create a small opening.
  4. Fill each puri with the potato and chickpea mixture generously.
  5. Top the filled puris with a dollop of vegan yogurt, followed by a drizzle of tamarind and green chutney.
  6. Sprinkle a little extra chaat masala and roasted cumin powder on top for added flavor.
