Ingredients

  • All-purpose flour - 1 cup
  • Semolina - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Water - as needed for dough
  • Oil - for deep frying
  • Moong dal (split yellow lentils) - 1/2 cup
  • Cumin seeds - 1/2 teaspoon
  • Ginger - 1-inch piece, grated
  • Green chili - 1, finely chopped
  • Chaat masala - 1 teaspoon
  • Yogurt - 1 cup, whisked
  • Tamarind chutney - 2 tablespoons
  • Mint chutney - 2 tablespoons
  • Coriander leaves - for garnish

Steps

  1. In a mixing bowl, combine all-purpose flour, semolina, salt, and enough water to knead into a soft dough. Cover with a damp cloth and set aside for 20 minutes.
  2. Soak moong dal in water for 30 minutes, then drain. In a cooking pan, heat a teaspoon of oil, add cumin seeds, grated ginger, and green chili. Sauté for a minute.
  3. Add the soaked moong dal to the pan, season with salt and chaat masala, and cook until the dal is tender, about 5-7 minutes. Allow to cool, then blend into a coarse paste.
  4. Divide the dough into small balls and roll each into small discs, about 4 inches in diameter. Place a spoonful of the dal mixture in the center and fold the edges to seal. Gently flatten the filled ball.
  5. Heat oil in a deep frying pan over medium heat. Fry the kachoris until golden brown and crispy. Remove and drain on paper towels.
  6. To serve, place the kachoris on a plate, top with whisked yogurt, drizzle with tamarind and mint chutneys, and garnish with chopped coriander leaves.
