Dahi Dhokla

- Rice flour - 100 grams
- Yogurt - 100 grams
- Water - 50 ml
- Baking soda - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Turmeric powder - 1/4 teaspoon
- Green chilies - 1, finely chopped
- Ginger - 1/2 inch piece, grated
- Coriander leaves - 2 tablespoons, chopped
- Mustard seeds - 1/2 teaspoon
- Sesame seeds - 1 tablespoon
- Curry leaves - 5-6 leaves
- Oil - 1 tablespoon for greasing and tempering
Steps
- In a mixing bowl, combine the rice flour, yogurt, water, baking soda, salt, turmeric powder, green chilies, ginger, and half of the coriander leaves. Mix well to form a smooth batter.
- Allow the batter to rest for about 10-15 minutes to ferment slightly.
- Grease a steaming tray or a round cake pan with oil.
- Pour the batter into the greased tray, filling it about halfway.
- In a steamer, bring water to a boil. Place the tray in the steamer and cover it with a lid. Steam for about 15-20 minutes or until a toothpick inserted in the center comes out clean.
- While the dhokla is steaming, heat 1 tablespoon of oil in a small pan. Add mustard seeds and allow them to splutter. Add sesame seeds and curry leaves, and sauté for a minute.
- Once the dhokla is done, remove it from the steamer and let it cool for a few minutes. Cut into squares or diamonds.
- Drizzle the tempering over the dhokla pieces and garnish with the remaining coriander leaves. Serve warm with green chutney.
