  • Plain yogurt (low-fat) - 200 grams
  • Cucumber - 100 grams
  • Tomato - 100 grams
  • Red onion - 50 grams
  • Fresh cilantro - 2 tablespoons, chopped
  • Green chili - 1, finely chopped
  • Lemon juice - 1 tablespoon
  • Cumin powder - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Wash the okra and trim the ends, then slice them into thin circles.
  2. Heat a non-stick pan over medium heat and dry roast the sliced okra for about 10 minutes until they are slightly crispy and cooked through. Stir occasionally to prevent burning.
  3. While the okra is roasting, chop the cucumber, tomato, and red onion into small pieces.
  4. In a bowl, combine the plain yogurt, lemon juice, cumin powder, salt, and black pepper. Mix well to create a dressing.
  5. Once the okra is done roasting, allow it to cool slightly, then add it to the bowl with the chopped vegetables.
  6. Pour the yogurt dressing over the salad and mix gently to coat all the ingredients evenly.
  7. Garnish with chopped cilantro and finely chopped green chili for an added kick.
  8. Serve immediately or chill in the refrigerator for 10 minutes before serving.
