- Urad dal (split black gram) - 100 grams
- Water - 500 ml (for soaking and blending)
- Salt - 1/2 teaspoon
- Oil - for frying
- Yogurt - 200 grams
- Chaat masala - 1 teaspoon
- Tamarind chutney - 2 tablespoons
- Mint chutney - 2 tablespoons
- Cumin powder - 1/2 teaspoon
- Red chili powder - 1/2 teaspoon
- Fresh coriander leaves - for garnishing
Steps
- Soak the urad dal in 250 ml of water for at least 4 hours or overnight.
- Drain the soaked dal and blend it with 50 ml of water to a smooth batter, adding salt.
- Heat oil in a deep pan over medium heat for frying.
- Using a spoon, drop small portions of the batter into the hot oil and fry until golden brown, about 3-4 minutes.
- Remove the fried dumplings and soak them in warm water for 10 minutes to soften.
- In a bowl, whisk the yogurt until smooth and season with salt.
- Squeeze the water out of the dumplings gently and arrange them on a serving plate.
- Pour the yogurt over the dumplings, followed by the tamarind chutney and mint chutney.
- Sprinkle chaat masala, cumin powder, and red chili powder on top.
- Garnish with fresh coriander leaves and serve immediately.
