Ingredients

  • Semolina - 1/2 cup
  • All-purpose flour - 2 tablespoons
  • Warm water - as needed
  • Potatoes - 2 medium (about 250g)
  • Cumin powder - 1 teaspoon
  • Chaat masala - 1 teaspoon
  • Salt - to taste
  • Coriander leaves - 2 tablespoons, chopped
  • Vegan yogurt - 1 cup
  • Tamarind chutney - 2 tablespoons
  • Mint chutney - 2 tablespoons
  • Pomegranate seeds - 2 tablespoons (optional)
  • Roasted cumin powder - 1/2 teaspoon

Steps

  1. In a mixing bowl, combine semolina, all-purpose flour, and a pinch of salt. Gradually add warm water and knead into a smooth dough. Cover with a damp cloth and let it rest for 15 minutes.
  2. Boil the potatoes until soft, peel, and mash them in a bowl. Add cumin powder, chaat masala, salt, and chopped coriander leaves. Mix well and set aside.
  3. Divide the rested dough into small balls (about the size of a walnut). Roll each ball into thin discs, about 3 inches in diameter.
  4. Heat oil in a deep pan over medium heat. Fry the puris until they puff up and are golden brown, about 1-2 minutes per side. Remove and drain on paper towels.
  5. To assemble, take a puri and gently break the top to create an opening. Fill it with the spiced potato mixture.
  6. Top each filled puri with vegan yogurt, tamarind chutney, and mint chutney. Sprinkle with roasted cumin powder and pomegranate seeds if using.
  7. Serve immediately and enjoy the burst of flavors!
