Ingredients

  • Basmati rice - 1 cup
  • Red lentils (masoor dal) - 1/2 cup
  • Water - 4 cups (for cooking rice and lentils)
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 inch piece, grated
  • Green chili - 1, slit (adjust to taste)
  • Turmeric powder - 1/2 teaspoon
  • Cumin seeds - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Cilantro (coriander leaves) - a handful, chopped (for garnish)
  • Lemon juice - 1 tablespoon
  • Oil - 1 tablespoon

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a pot, add the soaked rice with 2 cups of water. Bring it to a boil, then reduce heat to low, cover, and cook for about 15 minutes or until the water is absorbed and rice is fluffy.
  3. In another pot, add the red lentils and 2 cups of water. Bring to a boil, then add turmeric powder and salt. Simmer for about 15-20 minutes until the lentils are soft and mushy.
  4. In a pan, heat oil over medium heat. Add cumin seeds and let them splutter.
  5. Add the chopped onions and sauté until they become golden brown.
  6. Stir in the minced garlic, grated ginger, and green chili. Sauté for another minute until fragrant.
  7. Add chopped tomatoes, coriander powder, and garam masala. Cook until the tomatoes soften and oil starts to separate.
  8. Combine the cooked lentils with the onion-tomato mixture and adjust the consistency with water if needed. Simmer for 5 minutes.
  9. Serve the daal over the fluffy basmati rice, garnished with chopped cilantro and a squeeze of lemon juice.
