Daal Rice

Ingredients
- Basmati rice - 1 cup
- Red lentils (masoor dal) - 1/2 cup
- Water - 4 cups (for cooking rice and lentils)
- Onion - 1 medium, finely chopped
- Tomato - 1 medium, chopped
- Garlic - 2 cloves, minced
- Ginger - 1 inch piece, grated
- Green chili - 1, slit (adjust to taste)
- Turmeric powder - 1/2 teaspoon
- Cumin seeds - 1 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Salt - to taste
- Cilantro (coriander leaves) - a handful, chopped (for garnish)
- Lemon juice - 1 tablespoon
- Oil - 1 tablespoon
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a pot, add the soaked rice with 2 cups of water. Bring it to a boil, then reduce heat to low, cover, and cook for about 15 minutes or until the water is absorbed and rice is fluffy.
- In another pot, add the red lentils and 2 cups of water. Bring to a boil, then add turmeric powder and salt. Simmer for about 15-20 minutes until the lentils are soft and mushy.
- In a pan, heat oil over medium heat. Add cumin seeds and let them splutter.
- Add the chopped onions and sauté until they become golden brown.
- Stir in the minced garlic, grated ginger, and green chili. Sauté for another minute until fragrant.
- Add chopped tomatoes, coriander powder, and garam masala. Cook until the tomatoes soften and oil starts to separate.
- Combine the cooked lentils with the onion-tomato mixture and adjust the consistency with water if needed. Simmer for 5 minutes.
- Serve the daal over the fluffy basmati rice, garnished with chopped cilantro and a squeeze of lemon juice.
