Daal Puri

Ingredients
- Whole wheat flour - 1 cup
- Salt - 1/2 teaspoon
- Water - 1/3 cup (more if needed)
- Split yellow lentils (moong dal) - 1/2 cup
- Turmeric powder - 1/4 teaspoon
- Cumin seeds - 1/2 teaspoon
- Coriander powder - 1/2 teaspoon
- Green chili, finely chopped - 1 small
- Fresh cilantro, chopped - 2 tablespoons
- Oil for frying - as needed
Steps
- Rinse the split yellow lentils (moong dal) in water. Soak them in water for about 30 minutes, then drain.
- In a pot, add the soaked lentils, turmeric powder, and 1 cup of water. Cook until the lentils are soft, about 15-20 minutes.
- Once the lentils are cooked, drain any excess water and mash them slightly using a fork or a masher.
- Add cumin seeds, coriander powder, chopped green chili, and fresh cilantro to the mashed lentils. Mix well and let it cool.
- In a mixing bowl, combine the whole wheat flour and salt. Gradually add water and knead to form a soft dough. Cover and let it rest for 10 minutes.
- Divide the dough into 4 equal portions and roll each portion into a ball.
- Take one ball, flatten it slightly, and place about 2 tablespoons of the lentil filling in the center. Fold the edges over the filling and seal it tightly, then gently roll it out into a flat disc.
- Heat oil in a frying pan over medium heat. Once hot, carefully place the rolled Daal Puri into the oil.
- Fry until golden brown on both sides, about 2-3 minutes per side. Remove and drain on paper towels.
- Repeat the process for the remaining dough and filling. Serve hot with chutney or pickles.
