Ingredients

  • Chana dal (split chickpeas) - 100 grams
  • Water - 500 ml
  • Turmeric powder - 1/2 teaspoon
  • Cumin seeds - 1 teaspoon
  • Salt - 1 teaspoon
  • Green chilies - 1, finely chopped
  • Ginger - 1/2 inch, grated
  • Oil - 1 tablespoon (for tempering)
  • Fresh coriander leaves - 2 tablespoons, chopped
  • Pakwan (flour) - 100 grams
  • Semolina - 30 grams
  • Cumin powder - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Water (for dough) - as needed
  • Oil (for frying) - as needed

Steps

  1. Rinse the chana dal under cold water and then soak it in water for 2-3 hours. Drain the water after soaking.
  2. In a pot, add the soaked chana dal, 500 ml of water, turmeric powder, and salt. Cook it on medium heat until the dal is soft but not mushy, about 20-25 minutes.
  3. In a small frying pan, heat 1 tablespoon of oil. Add cumin seeds, green chilies, and grated ginger, and sauté for a minute until fragrant. Pour this tempering over the cooked dal and mix well. Garnish with chopped coriander leaves and set aside.
  4. In a mixing bowl, combine the flour, semolina, cumin powder, black pepper, and a pinch of salt. Gradually add water to form a stiff dough. Knead for a couple of minutes until smooth.
  5. Divide the dough into 4 equal portions. Roll each portion into a thin circle, about 4-5 inches in diameter.
  6. Heat oil in a deep frying pan over medium heat. Once hot, fry each rolled dough until golden brown and crispy, about 2-3 minutes on each side. Drain on paper towels.
  7. Serve the Daal Pakwan hot, with the spiced lentil curry on the side.
