Ingredients

  • Black lentils (urad dal) - 100 grams
  • Water - 1 liter
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, pureed
  • Ginger-garlic paste - 1 tablespoon
  • Cumin seeds - 1 teaspoon
  • Garam masala - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Salt - to taste
  • Oil (for frying) - 2 tablespoons
  • Fresh coriander leaves - for garnish

Steps

  1. Rinse the black lentils thoroughly and soak them in water for at least 4 hours or overnight.
  2. In a pot, add the soaked lentils and 1 liter of water. Bring to a boil, then reduce heat and simmer until the lentils are soft, about 30-40 minutes. Drain any excess water.
  3. In a large skillet, heat the oil over medium heat. Add cumin seeds and let them splutter.
  4. Add the chopped onion and sauté until golden brown.
  5. Stir in the ginger-garlic paste and cook for 1-2 minutes until fragrant.
  6. Add the pureed tomato, turmeric powder, red chili powder, coriander powder, and salt. Cook until the oil separates from the mixture, about 5-7 minutes.
  7. Add the cooked lentils to the skillet and mix well. Cook for another 5 minutes to allow the flavors to meld.
  8. Sprinkle garam masala over the lentils, mix gently, and remove from heat.
  9. Heat a little more oil in a separate pan and add the lentil mixture. Fry for an additional 5-7 minutes, stirring occasionally until it slightly crisps up.
  10. Garnish with fresh coriander leaves and serve hot.
