- Black lentils (urad dal) - 100 grams
- Water - 4 cups
- Ghee or olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 4 cloves, minced
- Ginger - 1-inch piece, grated
- Tomato - 1 large, pureed
- Green chili - 1, slit
- Garam masala - 1 teaspoon
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Salt - to taste
- Fresh cilantro - for garnish
- Lemon juice - 1 tablespoon
Steps
- Rinse the black lentils under cold water until the water runs clear, then soak them in water for at least 2 hours or overnight for best results.
- In a large pot, combine the soaked lentils with 4 cups of water, bring to a boil, then reduce heat and simmer covered for 30-40 minutes or until lentils are soft.
- In a separate pan, heat ghee or olive oil over medium heat. Add cumin seeds and let them sizzle for a few seconds.
- Add chopped onions and sauté until they turn golden brown. Then add minced garlic, grated ginger, and slit green chili; cook for another 2-3 minutes until fragrant.
- Stir in the pureed tomato, turmeric powder, and salt. Cook for about 5-7 minutes until the mixture thickens and oil separates.
- Add the cooked lentils to the tomato mixture, stir well, and let it simmer for an additional 10 minutes. Adjust the consistency with water if necessary.
- Finally, sprinkle garam masala and mix well. Remove from heat and stir in fresh lemon juice.
- Garnish with chopped cilantro before serving. Enjoy Daal Bukhara with steamed rice or whole wheat roti.
