Daal Baati

Daal Baati is a traditional Indian dish consisting of spicy lentil curry served with baked wheat balls, known as baati. This comforting meal is perfect for breakfast and offers a delightful combination of textures and flavors.

Ingredients

  • Yellow split lentils (moong dal) - 100 grams
  • Whole wheat flour - 150 grams
  • Ghee (clarified butter) - 3 tablespoons
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon
  • Salt - to taste
  • Water - 4 cups (for cooking lentils)
  • Water - 1/2 cup (for dough)
  • Fresh coriander leaves - for garnish
  • Onion - 1 small, finely chopped
  • Tomato - 1 small, chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated

Steps

  1. Rinse the yellow split lentils under cold water and soak them in water for 30 minutes.
  2. In a pot, add the soaked lentils, 4 cups of water, turmeric powder, and salt. Cook over medium heat until the lentils are soft, approximately 20-25 minutes.
  3. In a separate bowl, mix the whole wheat flour, 1 tablespoon of ghee, and a pinch of salt. Gradually add 1/2 cup of water to form a smooth dough.
  4. Divide the dough into 4 equal portions and shape each portion into a round ball (baati).
  5. Preheat the oven to 200°C (400°F). Place the baatis on a baking tray and bake for 20-25 minutes, turning them halfway through until they are golden brown and crusty.
  6. In a skillet, heat 2 tablespoons of ghee. Add cumin seeds, chopped onions, garlic, and ginger. Sauté until the onions are translucent.
  7. Add chopped tomatoes and red chili powder to the skillet. Cook until the tomatoes soften.
  8. Once the lentils are cooked, blend them slightly to achieve a creamy consistency. Combine with the sautéed mixture and simmer for 5 more minutes.
  9. Serve the daal hot, garnished with fresh coriander leaves, alongside the baked baatis. Drizzle remaining ghee over the baatis if desired.
