Daal Baati

Ingredients
- Yellow split lentils (moong dal) - 100 grams
- Whole wheat flour - 150 grams
- Ghee (clarified butter) - 3 tablespoons
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1 teaspoon
- Salt - to taste
- Water - 4 cups (for cooking lentils)
- Water - 1/2 cup (for dough)
- Fresh coriander leaves - for garnish
- Onion - 1 small, finely chopped
- Tomato - 1 small, chopped
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
Steps
- Rinse the yellow split lentils under cold water and soak them in water for 30 minutes.
- In a pot, add the soaked lentils, 4 cups of water, turmeric powder, and salt. Cook over medium heat until the lentils are soft, approximately 20-25 minutes.
- In a separate bowl, mix the whole wheat flour, 1 tablespoon of ghee, and a pinch of salt. Gradually add 1/2 cup of water to form a smooth dough.
- Divide the dough into 4 equal portions and shape each portion into a round ball (baati).
- Preheat the oven to 200°C (400°F). Place the baatis on a baking tray and bake for 20-25 minutes, turning them halfway through until they are golden brown and crusty.
- In a skillet, heat 2 tablespoons of ghee. Add cumin seeds, chopped onions, garlic, and ginger. Sauté until the onions are translucent.
- Add chopped tomatoes and red chili powder to the skillet. Cook until the tomatoes soften.
- Once the lentils are cooked, blend them slightly to achieve a creamy consistency. Combine with the sautéed mixture and simmer for 5 more minutes.
- Serve the daal hot, garnished with fresh coriander leaves, alongside the baked baatis. Drizzle remaining ghee over the baatis if desired.
