Ingredients

  • Whole wheat flour - 150 grams
  • Yellow split peas (moong dal) - 100 grams
  • Turmeric powder - 1/2 teaspoon
  • Cumin seeds - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Water - 200 ml (for dough)
  • Water - 500 ml (for boiling lentils)
  • Oil - for deep frying
  • Fresh coriander leaves - for garnish

Steps

  1. Rinse the yellow split peas under cold water and soak them in water for at least 2 hours.
  2. Drain the soaked split peas and blend them into a coarse paste using a little water, then set aside.
  3. In a mixing bowl, combine the whole wheat flour, turmeric powder, cumin seeds, coriander powder, garam masala, and salt.
  4. Gradually add water to the flour mixture and knead to form a soft dough. Cover with a damp cloth and let it rest for 15 minutes.
  5. Heat water in a pot and bring it to a boil. Add the yellow split pea paste and cook on medium heat until it thickens, stirring continuously for about 10-15 minutes. Set aside to cool.
  6. Divide the dough into small balls (about the size of a golf ball). Flatten each ball slightly and place a spoonful of the cooked split pea mixture in the center.
  7. Seal the dough around the filling and shape it into a ball again. Repeat for all the dough and filling.
  8. Heat oil in a deep frying pan over medium heat. Once hot, carefully drop the filled balls into the oil.
  9. Fry until they turn golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels.
  10. Garnish with fresh coriander leaves and serve hot with chutney or yogurt.
