- Cooked rice - 1 cup
- Vegan yogurt - 1/2 cup
- Mustard seeds - 1/2 teaspoon
- Urad dal (split black gram) - 1 tablespoon
- Curry leaves - 8-10 leaves
- Green chili - 1, finely chopped
- Ginger - 1 teaspoon, grated
- Salt - to taste
- Coriander leaves - 2 tablespoons, chopped
- Oil - 1 tablespoon
Steps
- In a mixing bowl, combine the cooked rice and vegan yogurt, mixing well until creamy and smooth.
- In a small pan, heat the oil over medium heat. Add the mustard seeds and let them splutter.
- Add the urad dal and sauté until golden brown, then add the curry leaves, green chili, and grated ginger. Sauté for another minute.
- Pour the tempering over the rice and yogurt mixture. Add salt to taste and mix well.
- Garnish with chopped coriander leaves and serve chilled or at room temperature.
