Ingredients

  • Cooked rice - 1 cup
  • Vegan yogurt - 1/2 cup
  • Mustard seeds - 1/2 teaspoon
  • Urad dal (split black gram) - 1 tablespoon
  • Curry leaves - 8-10 leaves
  • Green chili - 1, finely chopped
  • Ginger - 1 teaspoon, grated
  • Salt - to taste
  • Coriander leaves - 2 tablespoons, chopped
  • Oil - 1 tablespoon

Steps

  1. In a mixing bowl, combine the cooked rice and vegan yogurt, mixing well until creamy and smooth.
  2. In a small pan, heat the oil over medium heat. Add the mustard seeds and let them splutter.
  3. Add the urad dal and sauté until golden brown, then add the curry leaves, green chili, and grated ginger. Sauté for another minute.
  4. Pour the tempering over the rice and yogurt mixture. Add salt to taste and mix well.
  5. Garnish with chopped coriander leaves and serve chilled or at room temperature.
