Ingredients

  • Wild rice - 100 grams
  • Water - 500 ml
  • Dried cranberries - 50 grams
  • Pecans, chopped - 30 grams
  • Celery, finely chopped - 50 grams
  • Onion, finely chopped - 50 grams
  • Garlic, minced - 1 clove
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley, chopped - 2 tablespoons

Steps

  1. Rinse the wild rice under cold water and drain well.
  2. In a medium saucepan, bring 500 ml of water to a boil and add the wild rice, salt, and olive oil.
  3. Reduce the heat to low, cover, and simmer for about 40 minutes, or until the rice is tender and water is absorbed.
  4. While the rice cooks, heat a skillet over medium heat and add the chopped onion and celery with a drizzle of olive oil. Sauté for about 5-7 minutes until softened.
  5. Add the minced garlic and chopped pecans to the skillet and cook for an additional 2-3 minutes until fragrant and the pecans are toasted.
