- Wild rice - 1 cup (200g)
- Cranberries (dried) - 1/2 cup (70g)
- Almonds (sliced) - 1/4 cup (30g)
- Coconut milk - 1 cup (240ml)
- Honey - 1 tablespoon (15g)
- Cinnamon - 1/2 teaspoon (2g)
- Salt - 1/4 teaspoon (1g)
- Water - 2 cups (480ml)
Steps
- Rinse the wild rice under cold water until the water runs clear.
- In a medium saucepan, combine the wild rice, water, and salt. Bring to a boil over medium-high heat.
- Once boiling, reduce the heat to low, cover, and simmer for 30-35 minutes or until the rice is tender and the water is absorbed.
- In the last 5 minutes of cooking the rice, add the dried cranberries and sliced almonds to the pot to warm them through.
- In a separate small saucepan, heat the coconut milk and stir in the honey and cinnamon until well combined and warmed.
- Once the wild rice is cooked, fluff it with a fork and serve it in bowls.
- Drizzle the warm coconut milk mixture over the wild rice and top with additional almonds and cranberries if desired.
