- Almonds - 100g
- Walnuts - 50g
- Dried cranberries - 75g
- Flaxseed meal - 2 tablespoons
- Coconut oil - 2 tablespoons, melted
- Honey - 1 tablespoon
- Vanilla extract - 1 teaspoon
- Salt - a pinch
- Unsweetened shredded coconut - 30g (for rolling)
Steps
- In a food processor, combine the almonds and walnuts. Pulse until finely chopped but not a powder.
- Add the dried cranberries, flaxseed meal, melted coconut oil, honey, vanilla extract, and salt to the nuts in the food processor. Blend until the mixture is well combined and sticky.
- Using your hands, form the mixture into small balls, about 2.5 cm in diameter.
- Roll each ball in the shredded coconut until fully coated.
- Place the finished cranberry nut balls on a plate and refrigerate for at least 10 minutes to set before serving.
