- Almond flour - 120 grams
- Coconut flour - 30 grams
- Ground flaxseed - 15 grams
- Olive oil - 30 ml
- Water - 100 ml
- Salt - 1 teaspoon
- Fresh nopal (cactus paddles) - 200 grams, cleaned and diced
- Garlic - 1 clove, minced
- Fresh cilantro - 2 tablespoons, chopped
- Lime juice - 1 tablespoon
- Ground cumin - 1/2 teaspoon
- Chili powder - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Preheat your oven to 200°C (400°F).
- In a large bowl, combine the almond flour, coconut flour, ground flaxseed, and salt.
- Add olive oil and water to the dry ingredients, stirring until a dough forms. If the dough is too crumbly, add a little more water, one tablespoon at a time.
- Knead the dough briefly on a lightly floured surface until smooth, then divide it into two equal portions.
- Roll each portion into a flat round shape, about 1/4 inch thick, and place them on a baking sheet lined with parchment paper.
- In a skillet over medium heat, sauté the diced nopal cactus paddles with minced garlic, ground cumin, chili powder, and black pepper until tender, about 5-7 minutes.
- Remove the skillet from heat and stir in the lime juice and chopped cilantro.
- Spread the cactus mixture evenly over each flatbread.
- Bake the flatbreads in the preheated oven for 10-12 minutes or until golden and crispy.
- Remove from the oven and let cool slightly before slicing. Serve warm.
