- Ground bison - 300 grams
- Garlic powder - 1 teaspoon
- Onion powder - 1 teaspoon
- Cumin - 1/2 teaspoon
- Smoked paprika - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon
- Portobello mushrooms - 2 large
- Fresh spinach - 1 cup
- Tomato - 1 medium, sliced
- Avocado - 1 medium, sliced
- Fresh cilantro - 2 tablespoons, chopped
- Lime - 1, juiced
Steps
- In a bowl, combine the ground bison, garlic powder, onion powder, cumin, smoked paprika, salt, and black pepper. Mix until well combined.
- Form the mixture into two equal patties.
- Heat olive oil in a skillet over medium-high heat. Add the patties and cook for about 4-5 minutes on each side, or until they reach your desired doneness.
- While the patties are cooking, preheat a grill or grill pan over medium heat. Brush the portobello mushrooms with olive oil and grill them for about 3-4 minutes on each side until tender.
- Once the patties are cooked, remove them from the skillet and let them rest for a couple of minutes.
- To assemble, place a grilled portobello mushroom cap on a plate, top with a bison burger patty, add fresh spinach, sliced tomato, and avocado. Sprinkle with cilantro and drizzle with lime juice.
- Serve immediately and enjoy your Coyote Burger!
