- Almond flour - 120g
- Coconut flour - 30g
- Baking powder - 1 tsp
- Sea salt - 1/2 tsp
- Honey - 2 tbsp
- Eggs - 2 large
- Coconut milk - 120ml
- Ghee or coconut oil - 2 tbsp
Steps
- Preheat the oven to 180°C (350°F) and grease a small baking dish or cast-iron skillet with ghee or coconut oil.
- In a mixing bowl, combine the almond flour, coconut flour, baking powder, and sea salt until well mixed.
- In another bowl, whisk together the eggs, honey, and coconut milk until smooth.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
- Pour the batter into the prepared baking dish and smooth the top.
- Bake in the preheated oven for 20-25 minutes, or until the top is golden and a toothpick inserted into the center comes out clean.
- Allow to cool for a few minutes before slicing and serving warm with additional honey if desired.
