Ingredients

  • Almond flour - 120g
  • Coconut flour - 30g
  • Baking powder - 1 tsp
  • Sea salt - 1/2 tsp
  • Honey - 2 tbsp
  • Eggs - 2 large
  • Coconut milk - 120ml
  • Ghee or coconut oil - 2 tbsp

Steps

  1. Preheat the oven to 180°C (350°F) and grease a small baking dish or cast-iron skillet with ghee or coconut oil.
  2. In a mixing bowl, combine the almond flour, coconut flour, baking powder, and sea salt until well mixed.
  3. In another bowl, whisk together the eggs, honey, and coconut milk until smooth.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  5. Pour the batter into the prepared baking dish and smooth the top.
  6. Bake in the preheated oven for 20-25 minutes, or until the top is golden and a toothpick inserted into the center comes out clean.
  7. Allow to cool for a few minutes before slicing and serving warm with additional honey if desired.
