- Fresh spinach - 100 grams
- Sweet corn kernels - 150 grams
- Chickpea flour (besan) - 50 grams
- Rice flour - 20 grams
- Onion - 1 small, finely chopped
- Green chili - 1, finely chopped
- Ginger - 1 teaspoon, grated
- Cumin powder - 1/2 teaspoon
- Coriander powder - 1/2 teaspoon
- Turmeric powder - 1/4 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh coriander leaves - 2 tablespoons, chopped
- Water - as needed
- Oil - for shallow frying
Steps
- Wash the spinach thoroughly and chop it finely.
- In a mixing bowl, combine the chopped spinach, sweet corn, finely chopped onion, green chili, and grated ginger.
- Add chickpea flour, rice flour, cumin powder, coriander powder, turmeric powder, salt, and black pepper to the bowl.
- Mix all the ingredients well, adding water gradually until a thick batter forms.
- Heat oil in a pan over medium heat.
- Drop spoonfuls of the batter into the hot oil, flattening them slightly to form fritters.
- Fry the fritters for about 3-4 minutes on each side or until they are golden brown and crispy.
- Once cooked, remove the fritters from the pan and place them on a paper towel to absorb excess oil.
- Serve hot with mint chutney or yogurt dip.
