Ingredients

  • Fresh spinach - 100 grams
  • Sweet corn kernels - 150 grams
  • Chickpea flour (besan) - 50 grams
  • Rice flour - 20 grams
  • Onion - 1 small, finely chopped
  • Green chili - 1, finely chopped
  • Ginger - 1 teaspoon, grated
  • Cumin powder - 1/2 teaspoon
  • Coriander powder - 1/2 teaspoon
  • Turmeric powder - 1/4 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh coriander leaves - 2 tablespoons, chopped
  • Water - as needed
  • Oil - for shallow frying

Steps

  1. Wash the spinach thoroughly and chop it finely.
  2. In a mixing bowl, combine the chopped spinach, sweet corn, finely chopped onion, green chili, and grated ginger.
  3. Add chickpea flour, rice flour, cumin powder, coriander powder, turmeric powder, salt, and black pepper to the bowl.
  4. Mix all the ingredients well, adding water gradually until a thick batter forms.
  5. Heat oil in a pan over medium heat.
  6. Drop spoonfuls of the batter into the hot oil, flattening them slightly to form fritters.
  7. Fry the fritters for about 3-4 minutes on each side or until they are golden brown and crispy.
  8. Once cooked, remove the fritters from the pan and place them on a paper towel to absorb excess oil.
  9. Serve hot with mint chutney or yogurt dip.
