- Fresh spinach - 100 grams
- Sweet corn (canned or boiled) - 150 grams
- Potato (boiled and mashed) - 100 grams
- Onion (finely chopped) - 50 grams
- Ginger (grated) - 1 teaspoon
- Green chili (finely chopped) - 1 small
- Cumin powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Rice flour - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Oil - for shallow frying
Steps
- Wash the spinach thoroughly and blanch it in boiling water for 2 minutes. Drain and chop it finely.
- In a mixing bowl, combine the chopped spinach, sweet corn, boiled potato, finely chopped onion, ginger, green chili, cumin powder, garam masala, salt, and black pepper. Mix well until all ingredients are combined.
- Add the rice flour to the mixture to help bind it together. Mix again until a dough-like consistency forms.
- Divide the mixture into equal portions and shape them into small, flat patties (tikkis).
- Heat oil in a non-stick skillet over medium heat. Once hot, add the tikkis to the skillet, cooking them in batches if necessary.
- Fry the tikkis for about 4-5 minutes on each side or until they are golden brown and crispy.
- Remove the tikkis from the skillet and place them on a paper towel to absorb excess oil. Serve hot with green chutney or yogurt dip.
