Ingredients

  • Fresh corn kernels - 200 grams
  • Coconut milk - 200 ml
  • Vegetable broth - 300 ml
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Cilantro - 2 tablespoons, chopped
  • Lime juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Olive oil - 1 tablespoon

Steps

  1. Heat the olive oil in a medium pot over medium heat.
  2. Add the cumin seeds and sauté for 30 seconds until fragrant.
  3. Add the chopped onion, garlic, and ginger to the pot, and cook until the onion is translucent, about 5 minutes.
  4. Stir in the turmeric powder and cook for an additional minute.
  5. Add the fresh corn kernels and vegetable broth to the pot, bringing the mixture to a boil.
  6. Reduce the heat and let it simmer for about 10 minutes until the corn is tender.
  7. Remove the pot from heat and blend the soup using an immersion blender until smooth (or transfer to a blender and blend in batches).
  8. Return the blended soup to low heat, then stir in the coconut milk and lime juice.
  9. Season with salt and black pepper to taste, and heat through for another 5 minutes.
  10. Serve hot, garnished with chopped cilantro.
