- Vegetable broth - 300 ml

- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Cilantro - 2 tablespoons, chopped
- Lime juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Olive oil - 1 tablespoon
Steps
- Heat the olive oil in a medium pot over medium heat.
- Add the cumin seeds and sauté for 30 seconds until fragrant.
- Add the chopped onion, garlic, and ginger to the pot, and cook until the onion is translucent, about 5 minutes.
- Stir in the turmeric powder and cook for an additional minute.
- Add the fresh corn kernels and vegetable broth to the pot, bringing the mixture to a boil.
- Reduce the heat and let it simmer for about 10 minutes until the corn is tender.
- Remove the pot from heat and blend the soup using an immersion blender until smooth (or transfer to a blender and blend in batches).
- Return the blended soup to low heat, then stir in the coconut milk and lime juice.
- Season with salt and black pepper to taste, and heat through for another 5 minutes.
- Serve hot, garnished with chopped cilantro.
