Ingredients

  • Vegetable broth - 300 ml

  • Zucchini - 1 medium, diced
  • Bell pepper - 1 medium, diced
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 inch piece, grated
  • Curry powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Cilantro - 2 tablespoons, chopped
  • Lime juice - 1 tablespoon
  • Salt - to taste
  • Pepper - to taste
  • Olive oil - 1 tablespoon

Steps

  1. Heat olive oil in a pot over medium heat and add chopped onion, cooking until translucent.
  2. Add minced garlic and grated ginger, sauté for another 2 minutes until fragrant.
  3. Stir in diced carrots, zucchini, and bell pepper, cooking for about 5 minutes until they begin to soften.
  4. Add curry powder, turmeric, salt, and pepper, stirring well to coat the vegetables.
  5. Pour in the vegetable broth and bring to a simmer. Cook for about 10 minutes until the vegetables are tender.
  6. Add the coconut milk and lime juice, stirring well. Allow the soup to heat through for another 5 minutes.
  7. Remove from heat and garnish with fresh cilantro before serving.
