Coconut Rice

- Basmati rice - 1 cup
- Coconut milk - 1 cup
- Water - 1/2 cup
- Coconut oil - 1 tablespoon
- Mustard seeds - 1 teaspoon
- Cumin seeds - 1 teaspoon
- Green chili - 1, slit
- Fresh curry leaves - 8-10 leaves
- Salt - to taste
- Fresh coriander leaves - for garnish
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- In a pot, heat the coconut oil over medium heat. Add mustard seeds and cumin seeds, and let them splutter.
- Add the slit green chili and curry leaves to the pot, and sauté for about 1 minute until fragrant.
- Drain the soaked rice and add it to the pot, stirring gently to coat the rice with the spices.
- Pour in the coconut milk and water, and add salt to taste. Stir well.
- Bring the mixture to a boil, then reduce the heat to low, cover the pot, and let it simmer for about 15 minutes or until the rice is cooked and liquid is absorbed.
- Remove from heat and let it sit covered for another 5 minutes.
- Fluff the rice with a fork and garnish with fresh coriander leaves before serving.
