Coconut Rice

Ingredients

  • Basmati rice - 1 cup
  • Coconut milk - 1 cup
  • Water - 1/2 cup
  • Coconut oil - 1 tablespoon
  • Mustard seeds - 1 teaspoon
  • Cumin seeds - 1 teaspoon
  • Green chili - 1, slit
  • Fresh curry leaves - 8-10 leaves
  • Salt - to taste
  • Fresh coriander leaves - for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. In a pot, heat the coconut oil over medium heat. Add mustard seeds and cumin seeds, and let them splutter.
  3. Add the slit green chili and curry leaves to the pot, and sauté for about 1 minute until fragrant.
  4. Drain the soaked rice and add it to the pot, stirring gently to coat the rice with the spices.
  5. Pour in the coconut milk and water, and add salt to taste. Stir well.
  6. Bring the mixture to a boil, then reduce the heat to low, cover the pot, and let it simmer for about 15 minutes or until the rice is cooked and liquid is absorbed.
  7. Remove from heat and let it sit covered for another 5 minutes.
  8. Fluff the rice with a fork and garnish with fresh coriander leaves before serving.
