Ingredients
- Unsweetened grated coconut - 100 grams
- Almond flour - 30 grams
- Erythritol or any low-carb sweetener - 20 grams
- Ghee (clarified butter) - 1 tablespoon
- Cardamom powder - 1/2 teaspoon
- Chopped almonds (for garnish) - 10 grams
- Water - 2 tablespoons
Steps
- In a non-stick pan, heat the ghee over medium heat.
- Add the unsweetened grated coconut and almond flour to the pan, stirring well to combine with the ghee.
- Add the erythritol, cardamom powder, and water to the mixture. Cook for about 5-7 minutes, stirring continuously until the mixture thickens and starts to pull away from the sides of the pan.
- Remove the mixture from heat and let it cool slightly until it is manageable to touch.
- Once cool enough, grease your palms with a little ghee and form small balls (ladoos) from the mixture.
- Roll the ladoos in chopped almonds for garnish, if desired, and place them on a plate.
- Allow the ladoos to set for about 10 minutes before serving.
