Ingredients

  • Unsweetened grated coconut - 100 grams
  • Almond flour - 30 grams
  • Erythritol or any low-carb sweetener - 20 grams
  • Ghee (clarified butter) - 1 tablespoon
  • Cardamom powder - 1/2 teaspoon
  • Chopped almonds (for garnish) - 10 grams
  • Water - 2 tablespoons

Steps

  1. In a non-stick pan, heat the ghee over medium heat.
  2. Add the unsweetened grated coconut and almond flour to the pan, stirring well to combine with the ghee.
  3. Add the erythritol, cardamom powder, and water to the mixture. Cook for about 5-7 minutes, stirring continuously until the mixture thickens and starts to pull away from the sides of the pan.
  4. Remove the mixture from heat and let it cool slightly until it is manageable to touch.
  5. Once cool enough, grease your palms with a little ghee and form small balls (ladoos) from the mixture.
  6. Roll the ladoos in chopped almonds for garnish, if desired, and place them on a plate.
  7. Allow the ladoos to set for about 10 minutes before serving.
