  • Cumin powder - 1/2 teaspoon
  • Ghee or oil - 1 tablespoon
  • Chopped vegetables (bell pepper, spinach, etc.) - 1 cup
  • Paneer (cottage cheese), cubed - 100 grams
  • Fresh coriander, chopped - for garnish

Steps

  1. In a mixing bowl, combine coconut flour, turmeric powder, salt, black pepper, and cumin powder.
  2. In another bowl, whisk the egg and add it to the dry mixture, then gradually add water while stirring until a smooth batter forms.
  3. Heat a non-stick skillet over medium heat and add ghee or oil.
  4. Pour a ladleful of the batter into the skillet and spread it out to form a thin noodle-like layer.
  5. Cook for about 2-3 minutes on each side until lightly golden and cooked through, then repeat the process with the remaining batter.
  6. In the same skillet, add the chopped vegetables and paneer, sautéing for 5-7 minutes until the vegetables are tender.
  7. Add the cooked coconut noodles to the skillet with the vegetables and paneer, tossing everything together for another 2-3 minutes to combine the flavors.
  8. Serve hot, garnished with fresh coriander.
