Ingredients

  • fresh grated coconut - 50 grams
  • chickpea flour (besan) - 40 grams
  • jaggery (grated) - 30 grams
  • yogurt - 100 grams
  • cardamom powder - 1/4 teaspoon
  • baking powder - 1/2 teaspoon
  • water - 150 milliliters
  • salt - a pinch
  • coriander leaves (for garnish) - 10 grams

Steps

  1. In a mixing bowl, combine the grated coconut, chickpea flour, jaggery, yogurt, cardamom powder, baking powder, salt, and water. Mix well until you have a smooth batter.
  2. Preheat a steamer or a pot with water for steaming.
  3. Grease two ramekins or small bowls with a little oil and pour the batter evenly into them.
  4. Once the water in the steamer is boiling, place the ramekins in the steamer basket and cover with a lid.
  5. Steam the puddings for about 20-25 minutes, or until a toothpick inserted in the center comes out clean.
  6. Remove from the steamer and let them cool for a few minutes.
  7. Garnish with chopped coriander leaves before serving.
