Ingredients

  • Roasted chana dal - 2 tablespoons
  • Salt - to taste
  • Cilantro - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Water - 3 tablespoons (adjust for consistency)
  • Mustard seeds - 1/2 teaspoon
  • Curry leaves - 5-6 leaves
  • Oil (coconut or any cooking oil) - 1 teaspoon

Steps

  1. In a blender, combine the grated coconut, green chilies, ginger, roasted chana dal, salt, cilantro, lemon juice, and water. Blend until smooth, adding more water if necessary to achieve your desired consistency.
  2. Transfer the chutney to a bowl.
  3. In a small pan, heat the oil over medium heat. Add the mustard seeds and let them splutter.
  4. Add the curry leaves to the pan and sauté for a few seconds until fragrant.
  5. Pour the tempering over the prepared chutney and mix well.
  6. Serve the coconut chutney with your favorite low-carb breakfast dishes.
