- Fresh cilantro - 2 tablespoons (chopped)
- Lime juice - 1 tablespoon
- Green chili - 1 small (finely chopped, optional)
Steps
- Remove the leaves from the cauliflower and cut it into florets.
- In a food processor, pulse the cauliflower florets until they resemble rice grains.
- In a large skillet, heat the coconut oil over medium heat. Add the mustard seeds and cumin seeds, cooking until they start to crackle.
- Add the chopped green chili (if using) and sauté for another minute.
- Stir in the turmeric powder and cauliflower rice, mixing well to combine.
- Pour in the coconut milk and season with salt to taste. Cook for about 5-7 minutes, stirring occasionally, until the cauliflower is tender and the mixture is well combined.
