  • Mustard seeds - 1 teaspoon
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Salt - to taste
  • Fresh cilantro - 2 tablespoons (chopped)
  • Lime juice - 1 tablespoon
  • Green chili - 1 small (finely chopped, optional)

Steps

  1. Remove the leaves from the cauliflower and cut it into florets.
  2. In a food processor, pulse the cauliflower florets until they resemble rice grains.
  3. In a large skillet, heat the coconut oil over medium heat. Add the mustard seeds and cumin seeds, cooking until they start to crackle.
  4. Add the chopped green chili (if using) and sauté for another minute.
  5. Stir in the turmeric powder and cauliflower rice, mixing well to combine.
  6. Pour in the coconut milk and season with salt to taste. Cook for about 5-7 minutes, stirring occasionally, until the cauliflower is tender and the mixture is well combined.
