- Whole wheat bread - 4 slices
- Cucumber - 1 medium, thinly sliced
- Tomato - 1 medium, thinly sliced
- Onion - 1 small, thinly sliced
- Fresh coriander leaves - 1/4 cup, chopped
- Green chili - 1 small, finely chopped (optional)
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Green chutney - 4 tablespoons (store-bought or homemade)
Steps
- In a mixing bowl, combine chopped coriander leaves, green chili (if using), lemon juice, salt, and black pepper to make a fresh chutney mix.
- Take two slices of whole wheat bread and spread 2 tablespoons of green chutney on each slice.
- Layer the cucumber, tomato, and onion slices evenly on top of the chutney on one of the slices.
- Sprinkle a little more salt and pepper over the vegetables for added flavor.
- Cover with the second slice of bread, chutney side down, to form a sandwich.
- Repeat the process with the remaining slices of bread and vegetables to make a second sandwich.
- Cut the sandwiches diagonally and serve immediately, optionally with extra chutney on the side.
