Ingredients

  • Whole wheat bread - 4 slices
  • Cucumber - 1 medium, thinly sliced
  • Tomato - 1 medium, thinly sliced
  • Onion - 1 small, thinly sliced
  • Fresh coriander leaves - 1/4 cup, chopped
  • Green chili - 1 small, finely chopped (optional)
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Green chutney - 4 tablespoons (store-bought or homemade)

Steps

  1. In a mixing bowl, combine chopped coriander leaves, green chili (if using), lemon juice, salt, and black pepper to make a fresh chutney mix.
  2. Take two slices of whole wheat bread and spread 2 tablespoons of green chutney on each slice.
  3. Layer the cucumber, tomato, and onion slices evenly on top of the chutney on one of the slices.
  4. Sprinkle a little more salt and pepper over the vegetables for added flavor.
  5. Cover with the second slice of bread, chutney side down, to form a sandwich.
  6. Repeat the process with the remaining slices of bread and vegetables to make a second sandwich.
  7. Cut the sandwiches diagonally and serve immediately, optionally with extra chutney on the side.
