- Basmati rice - 1 cup
- Water - 2 cups
- Coconut oil - 1 tablespoon
- Mustard seeds - 1 teaspoon
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Salt - 1 teaspoon
- Chili powder - 1/2 teaspoon
- Fresh cilantro - 1/4 cup, chopped
- Chutney (your choice: mint, coriander, or tomato) - 1/2 cup
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- In a pot, bring 2 cups of water to a boil. Add the soaked rice, salt, and turmeric powder. Stir gently and reduce heat to low, covering the pot with a lid. Cook for 15 minutes or until the rice is fluffy and water is absorbed.
- In a separate pan, heat coconut oil over medium heat. Add mustard seeds and cumin seeds, and sauté until they begin to crackle.
- Add chili powder and chopped cilantro to the pan, stirring for another minute to release the flavors.
- Once the rice is cooked, fluff it with a fork and gently fold in the spiced oil mixture from the pan.
- Serve the chutney rice warm, accompanied by your choice of chutney on the side.
