Ingredients

  • Basmati rice - 1 cup
  • Water - 2 cups
  • Coconut oil - 1 tablespoon
  • Mustard seeds - 1 teaspoon
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Chili powder - 1/2 teaspoon
  • Fresh cilantro - 1/4 cup, chopped
  • Chutney (your choice: mint, coriander, or tomato) - 1/2 cup

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. In a pot, bring 2 cups of water to a boil. Add the soaked rice, salt, and turmeric powder. Stir gently and reduce heat to low, covering the pot with a lid. Cook for 15 minutes or until the rice is fluffy and water is absorbed.
  3. In a separate pan, heat coconut oil over medium heat. Add mustard seeds and cumin seeds, and sauté until they begin to crackle.
  4. Add chili powder and chopped cilantro to the pan, stirring for another minute to release the flavors.
  5. Once the rice is cooked, fluff it with a fork and gently fold in the spiced oil mixture from the pan.
  6. Serve the chutney rice warm, accompanied by your choice of chutney on the side.
