- Urad dal - 30 grams
- Coriander seeds - 1 tablespoon
- Cumin seeds - 1 teaspoon
- Dried red chilies - 3-4 pieces
- Black sesame seeds - 1 tablespoon
- Salt - to taste
- Asafoetida (hing) - a pinch
- Curry leaves - 10-12 leaves
Steps
- In a dry skillet over medium heat, roast the chana dal, urad dal, coriander seeds, cumin seeds, and dried red chilies until they are golden brown and aromatic, about 5-7 minutes.
- Add the black sesame seeds and roast for an additional 1-2 minutes, being careful not to burn them.
- Remove the skillet from heat and allow the mixture to cool slightly.
- In the same skillet, add the curry leaves and roast them for about 1-2 minutes until they become crisp.
- Combine the roasted lentil and spice mixture with the roasted curry leaves in a blender.
- Add salt and a pinch of asafoetida to the blender and blend everything into a coarse powder.
- Transfer the chutney pudi to an airtight container and let it cool completely before sealing.
