Ingredients

  • Chana dal - 30 grams
  • Urad dal - 30 grams
  • Coriander seeds - 1 tablespoon
  • Cumin seeds - 1 teaspoon
  • Dried red chilies - 3-4 pieces
  • Black sesame seeds - 1 tablespoon
  • Salt - to taste
  • Asafoetida (hing) - a pinch
  • Curry leaves - 10-12 leaves

Steps

  1. In a dry skillet over medium heat, roast the chana dal, urad dal, coriander seeds, cumin seeds, and dried red chilies until they are golden brown and aromatic, about 5-7 minutes.
  2. Add the black sesame seeds and roast for an additional 1-2 minutes, being careful not to burn them.
  3. Remove the skillet from heat and allow the mixture to cool slightly.
  4. In the same skillet, add the curry leaves and roast them for about 1-2 minutes until they become crisp.
  5. Combine the roasted lentil and spice mixture with the roasted curry leaves in a blender.
  6. Add salt and a pinch of asafoetida to the blender and blend everything into a coarse powder.
  7. Transfer the chutney pudi to an airtight container and let it cool completely before sealing.
