Ingredients

  • Chana dal - 30 grams
  • Urad dal - 30 grams
  • Sesame seeds - 15 grams
  • Dried red chilies - 4 pieces
  • Curry leaves - 10 leaves
  • Salt - 1 teaspoon
  • Asafetida (hing) - 1/4 teaspoon
  • Oil - 1 teaspoon (for roasting)

Steps

  1. Heat 1 teaspoon of oil in a pan over medium heat.
  2. Add the chana dal and urad dal to the pan and roast until they turn golden brown, stirring occasionally (about 5-7 minutes).
  3. Add the dried red chilies and curry leaves to the pan, and continue roasting for another 2-3 minutes until the chilies are aromatic.
  4. Remove the pan from heat and let the mixture cool for a few minutes.
  5. Once cooled, transfer the roasted mixture to a blender or spice grinder.
  6. Add salt and asafetida to the blender, and blend until you achieve a fine powder consistency.
  7. Store the chutney podi in an airtight container.
