- Chana dal - 30 grams
- Urad dal - 30 grams
- Sesame seeds - 15 grams
- Dried red chilies - 4 pieces
- Curry leaves - 10 leaves
- Salt - 1 teaspoon
- Asafetida (hing) - 1/4 teaspoon
- Oil - 1 teaspoon (for roasting)
Steps
- Heat 1 teaspoon of oil in a pan over medium heat.
- Add the chana dal and urad dal to the pan and roast until they turn golden brown, stirring occasionally (about 5-7 minutes).
- Add the dried red chilies and curry leaves to the pan, and continue roasting for another 2-3 minutes until the chilies are aromatic.
- Remove the pan from heat and let the mixture cool for a few minutes.
- Once cooled, transfer the roasted mixture to a blender or spice grinder.
- Add salt and asafetida to the blender, and blend until you achieve a fine powder consistency.
- Store the chutney podi in an airtight container.
