Churma
Churma is a delightful vegan Indian dessert made from coarsely ground whole wheat flour, sweetened with jaggery, and flavored with cardamom and nuts. This dish is perfect for a sweet ending to any meal, offering a rich, nutty flavor and a satisfying crunch.

Ingredients
- Whole wheat flour - 100 grams
- Jaggery (grated) - 50 grams
- Ghee (or coconut oil for vegan) - 2 tablespoons
- Cardamom powder - 1/2 teaspoon
- Chopped mixed nuts (almonds, cashews) - 30 grams
- Water - 1/4 cup
Steps
- In a mixing bowl, add the whole wheat flour and 1 tablespoon of ghee (or coconut oil). Mix well until the flour resembles coarse crumbs.
- Gradually add water, a little at a time, to knead the flour into a soft dough. Cover it with a damp cloth and let it rest for 10 minutes.
- Preheat a non-stick pan or tawa over medium heat. Divide the dough into small balls and flatten each ball into a small disc.
- Cook each disc on the hot pan for about 2-3 minutes on each side until golden brown and cooked through. Remove and let them cool.
- Once cooled, crumble the discs into a coarse powder in a mixing bowl.
- In a separate pan, heat the remaining tablespoon of ghee (or coconut oil) and add the chopped nuts. Sauté until they are lightly toasted.
- Add the crumbled dough to the pan along with the grated jaggery and cardamom powder. Mix well on low heat until the jaggery melts and coats the flour mixture evenly.
- Remove from heat and let it cool slightly before serving.
