- Chayote squash (chow chow) - 250 grams, diced
- Coconut milk - 200 ml
- Onion - 1 medium, finely chopped
- Tomato - 1 medium, chopped
- Green chili - 1, slit
- Mustard seeds - 1 teaspoon
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Salt - to taste
- Oil (coconut or vegetable) - 2 tablespoons
- Curry leaves - 8-10 leaves
- Fresh cilantro - for garnish
Steps
- Heat oil in a pan over medium heat. Add mustard seeds and let them splutter.
- Add cumin seeds and curry leaves, sautéing for about 30 seconds until fragrant.
- Add the chopped onion and green chili, and cook until the onion turns translucent.
- Stir in the chopped tomato and cook for 2-3 minutes until the tomato softens.
- Add the diced chayote squash, turmeric, coriander powder, and salt. Mix well to coat the squash with the spices.
- Pour in the coconut milk and bring the mixture to a gentle simmer. Cover and cook for 10-15 minutes, or until the chayote is tender.
- Once cooked, adjust seasoning if necessary and remove from heat.
- Garnish with fresh cilantro before serving.
