Ingredients

  • Green cucumber - 200 grams, diced
  • Carrot - 100 grams, grated
  • Green chili - 1, finely chopped
  • Mustard seeds - 1 teaspoon
  • Curry leaves - 8-10 leaves
  • Turmeric powder - 1/4 teaspoon
  • Salt - to taste
  • Lemon juice - 1 tablespoon
  • Coriander leaves - 2 tablespoons, chopped
  • Oil (preferably coconut or vegetable) - 1 tablespoon

Steps

  1. Heat oil in a pan over medium heat and add mustard seeds. Once they start to splutter, add curry leaves and chopped green chili, sautéing for about 30 seconds.
  2. Add the diced cucumber and grated carrot to the pan. Stir well to combine with the spices.
  3. Sprinkle turmeric powder and salt over the vegetables. Mix thoroughly and cook for 5-7 minutes until the vegetables are tender but still crisp.
  4. Remove from heat and add lemon juice and chopped coriander leaves. Mix well.
  5. Serve warm or at room temperature as a side dish.
