Ingredients
- Green cucumber - 200 grams, diced
- Carrot - 100 grams, grated
- Green chili - 1, finely chopped
- Mustard seeds - 1 teaspoon
- Curry leaves - 8-10 leaves
- Turmeric powder - 1/4 teaspoon
- Salt - to taste
- Lemon juice - 1 tablespoon
- Coriander leaves - 2 tablespoons, chopped
- Oil (preferably coconut or vegetable) - 1 tablespoon
Steps
- Heat oil in a pan over medium heat and add mustard seeds. Once they start to splutter, add curry leaves and chopped green chili, sautéing for about 30 seconds.
- Add the diced cucumber and grated carrot to the pan. Stir well to combine with the spices.
- Sprinkle turmeric powder and salt over the vegetables. Mix thoroughly and cook for 5-7 minutes until the vegetables are tender but still crisp.
- Remove from heat and add lemon juice and chopped coriander leaves. Mix well.
- Serve warm or at room temperature as a side dish.
