Ingredients

  • Chickpeas - 200 grams (soaked overnight)
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, pureed
  • Ginger - 1 inch, grated
  • Garlic - 4 cloves, minced
  • Green chili - 1, slit
  • Cumin seeds - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Cumin powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Oil - 2 tablespoons
  • Fresh coriander leaves - for garnish
  • All-purpose flour - 1 cup
  • Yogurt - 2 tablespoons
  • Baking powder - 1/2 teaspoon
  • Warm water - as required
  • Salt - 1/2 teaspoon (for dough)
  • Oil - for deep frying

Steps

  1. Drain and rinse the soaked chickpeas. Pressure cook them with 3 cups of water and a pinch of salt for about 15-20 minutes until soft. Alternatively, boil them in a pot until tender.
  2. In a pan, heat 2 tablespoons of oil over medium heat. Add cumin seeds, and when they splutter, add finely chopped onions. Sauté until they turn golden brown.
  3. Add grated ginger, minced garlic, and slit green chili to the onions. Sauté for another 2 minutes until fragrant.
  4. Stir in the pureed tomato, turmeric powder, coriander powder, cumin powder, and salt. Cook until the oil separates from the mixture.
  5. Add the cooked chickpeas along with 1 cup of water. Simmer for 10-15 minutes, stirring occasionally. Adjust salt and spices as needed.
  6. Stir in garam masala and cook for another 2 minutes. Garnish with chopped coriander leaves.
  7. For the bhature, in a bowl, mix all-purpose flour, yogurt, baking powder, and salt. Gradually add warm water to form a soft dough. Knead for about 5 minutes and let it rest for 30 minutes.
  8. Divide the dough into small balls. Roll each ball into a circle about 6 inches in diameter.
  9. Heat oil in a deep frying pan. Fry each rolled bhature until puffed and golden brown on both sides. Drain excess oil on paper towels.
  10. Serve hot chole with bhature and garnish with onion slices and lemon wedges.
