Chole Puri

Ingredients
- Chickpeas (dried) - 100 grams
- Onion - 1 medium, finely chopped
- Tomato - 1 medium, chopped
- Ginger - 1 inch piece, grated
- Garlic - 2 cloves, minced
- Green chili - 1, slit
- Cumin seeds - 1 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Turmeric powder - 1/2 teaspoon
- Salt - to taste
- Oil - 2 tablespoons (for cooking)
- Water - 500 ml (for cooking chickpeas)
- Whole wheat flour - 200 grams (for puris)
- Semolina - 2 tablespoons (for puris)
- Salt - 1/2 teaspoon (for puris)
- Water - as needed (for puris)
- Oil - for deep frying (for puris)
Steps
- Soak the dried chickpeas in water overnight. Drain and rinse them before cooking.
- In a pressure cooker, add the soaked chickpeas with 500 ml of water and salt. Cook for about 15-20 minutes until soft. Release the pressure and set aside.
- In a pan, heat 2 tablespoons of oil over medium heat. Add cumin seeds and let them sizzle.
- Add the chopped onion and sauté until golden brown. Then add ginger, garlic, and green chili; cook for 2 minutes.
- Stir in the chopped tomato, coriander powder, turmeric powder, and salt. Cook until the tomatoes soften and oil separates.
- Add the cooked chickpeas along with a little of the cooking water to achieve desired consistency. Stir in garam masala and simmer for 10 minutes.
- For the puris, mix whole wheat flour, semolina, and salt in a bowl. Gradually add water to form a soft dough. Let it rest for 15 minutes.
- Divide the dough into small balls. Roll each ball into a small circle (about 5 inches in diameter) using a rolling pin.
- Heat oil in a deep frying pan over medium heat. Fry the puris one at a time until they puff up and turn golden brown on both sides. Drain on paper towels.
- Serve the hot chole with puris and enjoy your delicious breakfast!
