Ingredients

  • Basmati rice - 1 cup
  • Chickpeas (canned or boiled) - 1 cup
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, chopped
  • Ginger - 1 inch, grated
  • Garlic - 2 cloves, minced
  • Green chili - 1, slit
  • Chole Masala spice mix - 2 tablespoons
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Cilantro - 2 tablespoons, chopped
  • Cooking oil - 2 tablespoons
  • Salt - to taste
  • Water - 2 cups

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. In a pot, heat the cooking oil over medium heat. Add cumin seeds and let them sizzle for a few seconds.
  3. Add the chopped onions and sauté until golden brown, about 5-7 minutes.
  4. Stir in the grated ginger, minced garlic, and slit green chili. Cook for another 2 minutes until fragrant.
  5. Add the chopped tomato and cook until soft, about 3-4 minutes.
  6. Mix in the chole masala spice mix, turmeric powder, and salt. Cook for 2 minutes, stirring well.
  7. Add the chickpeas and stir to coat them with the spice mixture. Cook for 3 minutes.
  8. Drain the soaked rice and add it to the pot. Pour in the water and bring to a boil.
  9. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 15 minutes or until the rice is cooked and water is absorbed.
  10. Remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork and garnish with chopped cilantro before serving.
