- Basmati rice - 1 cup
- Chickpeas (canned or boiled) - 1 cup
- Onion - 1 medium, finely chopped
- Tomato - 1 medium, chopped
- Ginger - 1 inch, grated
- Garlic - 2 cloves, minced
- Green chili - 1, slit
- Chole Masala spice mix - 2 tablespoons
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Cilantro - 2 tablespoons, chopped
- Cooking oil - 2 tablespoons
- Salt - to taste
- Water - 2 cups
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- In a pot, heat the cooking oil over medium heat. Add cumin seeds and let them sizzle for a few seconds.
- Add the chopped onions and sauté until golden brown, about 5-7 minutes.
- Stir in the grated ginger, minced garlic, and slit green chili. Cook for another 2 minutes until fragrant.
- Add the chopped tomato and cook until soft, about 3-4 minutes.
- Mix in the chole masala spice mix, turmeric powder, and salt. Cook for 2 minutes, stirring well.
- Add the chickpeas and stir to coat them with the spice mixture. Cook for 3 minutes.
- Drain the soaked rice and add it to the pot. Pour in the water and bring to a boil.
- Once boiling, reduce the heat to low, cover the pot, and let it simmer for 15 minutes or until the rice is cooked and water is absorbed.
- Remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork and garnish with chopped cilantro before serving.
