Chole Kulche

- Chickpeas (cooked) - 200 grams
- Onion (finely chopped) - 1 medium
- Tomato (pureed) - 1 medium
- Ginger (grated) - 1 teaspoon
- Garlic (minced) - 1 teaspoon
- Green chili (chopped) - 1 small
- Cumin seeds - 1 teaspoon
- Coriander powder - 1 teaspoon
- Cumin powder - 1/2 teaspoon
- Garam masala - 1/2 teaspoon
- Turmeric powder - 1/4 teaspoon
- Salt - to taste
- Fresh coriander leaves (chopped) - 2 tablespoons
- Oil - 2 tablespoons
- Kulcha bread - 2 pieces
- Butter - for serving
Steps
- Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
- Add the chopped onions and sauté until they turn golden brown.
- Stir in the grated ginger, minced garlic, and chopped green chili. Cook for 2 minutes.
- Add the tomato puree and cook until the oil separates from the mixture.
- Mix in coriander powder, cumin powder, turmeric powder, and salt. Cook for another 2 minutes.
- Add the cooked chickpeas and a little water to achieve desired consistency. Simmer for 10 minutes.
- Stir in garam masala and chopped coriander leaves just before serving.
- In another pan, heat the kulcha bread on both sides until golden brown. Optionally, spread butter on top.
- Serve the chole hot with kulche, garnished with more coriander if desired.
