Chole Bhaji

- Chickpeas (canned or boiled) - 200 grams
- Onion - 1 medium, finely chopped
- Tomato - 1 medium, finely chopped
- Green chili - 1, slit lengthwise
- Ginger - 1 teaspoon, grated
- Garlic - 1 teaspoon, minced
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Salt - to taste
- Oil - 2 tablespoons
- Fresh coriander leaves - for garnish
Steps
- Heat oil in a pan over medium heat and add cumin seeds. Once they splutter, add the chopped onions and sauté until golden brown.
- Add the grated ginger, minced garlic, and green chili to the pan. Cook for 1-2 minutes until fragrant.
- Stir in the chopped tomato and cook until it softens, about 3-4 minutes.
- Add turmeric powder, coriander powder, and salt. Mix well and cook for another 2 minutes.
- Add the chickpeas and mix everything thoroughly. Cook for 5-7 minutes, allowing the flavors to meld.
- Sprinkle garam masala over the top and mix gently. Cook for an additional 2 minutes.
- Garnish with fresh coriander leaves and serve hot with rice or bread.
