- Chickpeas - 200 grams (soaked overnight)
- Onion - 1 medium, finely chopped
- Tomato - 1 medium, pureed
- Ginger - 1 inch piece, finely grated
- Garlic - 4 cloves, minced
- Green chili - 1, slit
- Cumin seeds - 1 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1 teaspoon
- Salt - to taste
- Oil - 2 tablespoons
- Fresh coriander leaves - for garnish
- Lemon wedges - for serving
Steps
- Drain and rinse the soaked chickpeas. In a pressure cooker, add the chickpeas with 4 cups of water and a pinch of salt. Cook for about 15-20 minutes or until tender.
- In a large pan, heat the oil over medium heat. Add cumin seeds and let them splutter.
- Add chopped onions and sauté until golden brown.
- Stir in the ginger, garlic, and green chili. Cook for another 2-3 minutes until fragrant.
- Add the pureed tomato and cook until the oil separates from the mixture.
- Sprinkle in the turmeric, coriander powder, red chili powder, and garam masala. Mix well and cook for 5 minutes.
- Once the chickpeas are cooked, drain and add them to the pan with the spice mixture. Stir well to combine.
- Add 1 cup of water to achieve the desired consistency. Simmer for 10 minutes on low heat, allowing the flavors to meld.
- Taste and adjust salt if necessary. Garnish with fresh coriander leaves.
- Serve hot with bhaturas or rice, accompanied by lemon wedges.
