Ingredients

  • Chickpeas - 200 grams (soaked overnight)
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, pureed
  • Ginger - 1 inch piece, finely grated
  • Garlic - 4 cloves, minced
  • Green chili - 1, slit
  • Cumin seeds - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon
  • Salt - to taste
  • Oil - 2 tablespoons
  • Fresh coriander leaves - for garnish
  • Lemon wedges - for serving

Steps

  1. Drain and rinse the soaked chickpeas. In a pressure cooker, add the chickpeas with 4 cups of water and a pinch of salt. Cook for about 15-20 minutes or until tender.
  2. In a large pan, heat the oil over medium heat. Add cumin seeds and let them splutter.
  3. Add chopped onions and sauté until golden brown.
  4. Stir in the ginger, garlic, and green chili. Cook for another 2-3 minutes until fragrant.
  5. Add the pureed tomato and cook until the oil separates from the mixture.
  6. Sprinkle in the turmeric, coriander powder, red chili powder, and garam masala. Mix well and cook for 5 minutes.
  7. Once the chickpeas are cooked, drain and add them to the pan with the spice mixture. Stir well to combine.
  8. Add 1 cup of water to achieve the desired consistency. Simmer for 10 minutes on low heat, allowing the flavors to meld.
  9. Taste and adjust salt if necessary. Garnish with fresh coriander leaves.
  10. Serve hot with bhaturas or rice, accompanied by lemon wedges.
