Ingredients

  • Chokecherries - 250 grams
  • Water - 250 ml
  • Raw honey - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Cinnamon - 1/2 teaspoon
  • Sea salt - 1/4 teaspoon

Steps

  1. Rinse the chokecherries thoroughly under cold water and remove any stems or leaves.
  2. In a medium saucepan, combine the chokecherries and water. Bring to a boil over medium heat.
  3. Reduce the heat and simmer for 15-20 minutes, or until the chokecherries are soft and have released their juices.
  4. Remove the saucepan from heat and let it cool slightly.
  5. Strain the mixture through a fine mesh sieve or cheesecloth into a bowl, pressing down to extract as much juice as possible.
  6. Return the strained juice to the saucepan. Stir in the raw honey, lemon juice, cinnamon, and sea salt.
  7. Bring the mixture back to a boil and then reduce to a simmer for 5-10 minutes, or until slightly thickened.
  8. Remove from heat and let it cool completely before transferring to a jar for storage.
