- Sea salt - 1/4 teaspoon
Steps
- Rinse the chokecherries thoroughly under cold water and remove any stems or leaves.
- In a medium saucepan, combine the chokecherries and water. Bring to a boil over medium heat.
- Reduce the heat and simmer for 15-20 minutes, or until the chokecherries are soft and have released their juices.
- Remove the saucepan from heat and let it cool slightly.
- Strain the mixture through a fine mesh sieve or cheesecloth into a bowl, pressing down to extract as much juice as possible.
- Return the strained juice to the saucepan. Stir in the raw honey, lemon juice, cinnamon, and sea salt.
- Bring the mixture back to a boil and then reduce to a simmer for 5-10 minutes, or until slightly thickened.
