Ingredients

  • Chokecherries - 2 cups (approximately 300 grams)
  • Water - 1 cup (240 ml)
  • Honey - 1/3 cup (100 grams)
  • Lemon juice - 1 tablespoon (15 ml)
  • Pectin - 1 tablespoon (10 grams)

Steps

  1. Rinse the chokecherries thoroughly under cold water to remove any dirt or debris.
  2. In a medium saucepan, combine the chokecherries and water. Bring to a boil over medium heat, then reduce to low and simmer for 20 minutes, mashing the berries occasionally to release their juices.
  3. Remove the saucepan from heat and strain the mixture through a fine mesh sieve or cheesecloth into a bowl, pressing down to extract as much juice as possible. You should have about 1 cup of chokecherry juice.
  4. Return the chokecherry juice to the saucepan. Add honey, lemon juice, and pectin, stirring to combine.
  5. Bring the mixture to a boil over medium heat, stirring constantly until the pectin is fully dissolved.
  6. Continue to boil for an additional 5 minutes, then remove from heat. Allow to cool slightly before transferring to sterilized jars.
  7. Let the jelly sit at room temperature until set, then refrigerate to firm up completely. Enjoy your homemade chokecherry jelly!
